Local Specialties
Champsaur tourtons: Also called “baby Jesus’s pillow,” as they were traditionally served at Christmas, they are a specialty of the Champsaur valley. Savory or sweet, tourtons can be filled with mashed potatoes, spinach, but also apple compote, prunes, or blueberries.
Oreilles d’âne: Don’t worry, these are not real ears, but a traditional dish that gets its name from the wild spinach leaf used in its preparation. The leaf was picked when it reached the shape and size of a donkey’s ear. It’s on a fresh pasta, topped with béchamel sauce, grated cheese, and cream, that the spinach is baked until golden.
And also: Ravioles, frosted apple, devil’s kiss, Alpes tomme cheese, or Queyras croquants
